Fat Rosie’s is a spirited escape to a lively resort in Mexico, without ever leaving Lincolnshire, CH. The concept, a modern take on the traditional taqueria, is as much about the experience as the elevated dishes and craft cocktails.

Challenged with creating an energizing environment that celebrates the fun-loving, vibrant Mexican culture, we pulled out all the colorful stops to transport the guest and their senses to an authentic Mexican fiesta.

Iconic Mexican culture is reimagined in unexpected ways that set the tone for Fat Rosie’s Lincolnshire. Upon entry, guests are greeted with lime-scented scratch-and-sniff wallcoverings, guiding them to our custom-fabricated lime host stand. Taking a cue from the restaurant’s centerpiece, a majestic one-ton butterfly tree sculpture, color is at the forefront of our vivid escape. The architecture focuses on authentic Mexican materials, from plaster to honed bricks. We brought in natural wood elements and lots of authentic plantings including cactus, agave, and succulents to help soften the overall aesthetic and round out the space.
